Atay
Pork
liver marinated and cooked on the barbecue. Atay is a street-vendor
favourite, very tender, and particularly tasty when cooked over
charcoal and infused with the smoke. Can be eaten as-is, or dipped in sawsawin,
usually a mix of vinegar and chilli.
